Manual picking is done as it ensures high-quality tea and is highly dependent on the skill of the picker. Our Green tea comes from the second flush, meaning that the leaves are harvested during April-July, and only the young, tender hyson leaves are harvested. Typically, a second flush tea embodies a deeper body, darker appearance and a more satisfying experience.

3. Withering:

The freshly picked tea leaves are spread out in very thin layers on bamboo racks with the objective of reducing the moisture in the leaves. These are dried in natural air under shade for a minimum period of 20 to 24 hours.

4. Steaming:

To prevent oxidation and preserve the vibrant green colour and fresh flavour, the leaves are quickly pan-fired. This step involves heating the leaves in large pans usually for less than a minute, which halts the enzymatic activity that can lead to oxidation.
