Making Process

Extraction Process of Advait's Groundnut Oil

Cold pressing is a form of extraction method done at room temperature and does not involve heat which can break down the natural nutrients or at times alter the composition of the oil.

The extraction and making process of our cold-pressed groundnut oil involves several meticulous steps to ensure the highest quality and purity. Here's a detailed overview:

1. Cultivation at the Regenerative Farm:

All our groundnuts come from a single farm, specifically a regenerative farm owned by Advait Living. This ensures a controlled and monitored environment, contributing to the overall quality and purity of the final product.

2. Harvesting:

Once the plants reach maturity, the nuts are carefully harvested. Harvesting is a critical step to ensure that the nuts are at their peak, contributing to the rich flavour and nutritional content of the oil.

3. Seed Selection:

The process begins with the careful selection of the raw material – farm-fresh groundnuts. These nuts are chosen based on their quality and graded to meet the stringent standards set by us at Advait Living.

4. Cleaning and Sorting:

After harvesting, the nuts undergo a thorough cleaning process to remove any impurities, dirt, or debris.

5. Cold Pressing:

The hallmark of Advait Living's mustard oil lies in the cold pressing method. The cleaned and sorted nuts are subjected to cold pressing, a mechanical extraction process that involves crushing the nuts with a wooden press, called the chekku/ghani to obtain the oil.

During cold pressing of the nuts, we ensure that the oil is extracted (without the use of heat or chemical solvents), preserving the natural flavour and nutritional properties of the groundnuts.

6. Sedimentation:

Following the cold pressing, the raw groundnut oil is allowed to sediment for a couple of days. This step allows any impurities or particles to settle at the bottom.

7. Filtration with Cheese-Cloth:

After the sedimentation period, the oil undergoes a careful filtration process using a cheesecloth. This step removes any remaining particles or sediment, leaving behind a clear and pure mustard oil.

8. Packaging:

The final product, now a fresh and aromatic virgin groundnut oil, is elegantly packaged in glass bottles. The choice of glass ensures that the oil remains uncontaminated by external factors and retains its pristine quality until it reaches the consumer.

Is Cold Pressed Groundnut Oil Healthy?

Cold pressed groundnut oil is indeed a healthy choice due to its favorable fatty acid profile, retention of nutrients, and antioxidant content. When consumed as part of a balanced diet, it can contribute to overall health and well-being. However, like any oil, it should be used in moderation to reap its benefits without exceeding daily fat intake recommendations.

Health Benefits of Groundnut Oil:

1. Heart Health:

Monounsaturated fats can help lower bad cholesterol levels (LDL cholesterol) while raising good cholesterol levels (HDL cholesterol), thereby reducing the risk of heart disease.

2. Blood Sugar Control:

Consumption of monounsaturated fats may improve insulin sensitivity and help regulate blood sugar levels, which is beneficial for individuals with diabetes or those at risk of developing it.

3. Weight Management:

Incorporating moderate amounts of groundnut oil into a balanced diet may aid in weight management due to its ability to increase satiety and promote feelings of fullness.

4. Nutrient Absorption:

The healthy fats in groundnut oil can enhance the absorption of fat-soluble vitamins such as vitamins A, D, E, and K, which are essential for various bodily functions.

5. Antioxidants:

Cold-pressed groundnut oil retains significant levels of vitamin E, an antioxidant that helps protect cells from damage caused by free radicals. Antioxidants play a crucial role in reducing the risk of chronic diseases and promoting overall health.

Which is Better - First Pressed or Cold Pressed Groundnut Oil?

Both “first-pressed" and "cold pressed" refer to quality methods of extracting oil from groundnuts (peanuts) while preserving nutrients and flavour. Cold-pressed oil, extracted without heat, retains maximum nutrients and natural properties. First-pressed usually means the oil comes from the first extraction of the groundnuts, offering high quality and purity.

First Pressed Groundnut Oil:

  • The term "first pressed" generally refers to the initial extraction of oil from groundnuts. This method may involve mechanical pressing or the use of heat to facilitate oil extraction.
  • While the first pressing may retain some nutrients, if heat is used in the extraction process can degrade certain heat-sensitive compounds, such as vitamins and antioxidants.
  • First pressed groundnut oil may have a slightly different flavour profile compared to cold-pressed oil due to the potential exposure to heat during extraction.

Cold Pressed Groundnut Oil:

  • Cold pressing involves crushing the groundnuts and extracting oil from them without the use of heat. This method helps preserve the natural flavour and nutritional integrity of the oil.
  • This method is known for preserving the maximum amount of nutrients present in groundnuts, including essential fatty acids, vitamins, and antioxidants.
  • Cold pressed groundnut oil typically retains the true, rich flavour of peanuts, making it preferred for culinary purposes.

Which is Better?

In terms of nutritional quality and flavour, cold pressed groundnut oil is generally considered superior to first pressed oil. Cold pressed oils are often preferred by those seeking minimally processed and more wholesome food options.

What is the Difference Between Cold Pressed and Regular Groundnut Oil?

Cold pressed groundnut oil is generally considered superior in terms of nutritional quality and flavour compared to regular groundnut oil. The primary difference between cold pressed and regular groundnut oil lies in the method of extraction, which impacts the oil's quality, nutritional composition, and flavour.

Cold Pressed Groundnut Oil:

  • Cold-pressed groundnut oil is extracted from groundnuts (peanuts) without the use of heat.
  • The nuts are mechanically pressed at lower temperatures, typically below 120°F (49°C), to extract the oil.
  • This gentle extraction method helps preserve the oil's natural flavour and nutritional integrity.
  • It helps retain more of the oil's natural nutrients, including essential fatty acids, vitamins, and antioxidants. As a result, cold pressed groundnut oil tends to have a higher nutritional value compared to refined oils.
  • Cold pressed groundnut oil retains the true, nutty flavour and aroma of peanuts, making it a preferred choice for culinary purposes.

Regular (Processed/Refined) Groundnut Oil:

  • Regular groundnut oil, also known as refined or processed groundnut oil, is typically extracted using heat and/or chemical solvents such as hexane.
  • The use of heat and chemical solvents in the extraction process of regular groundnut oil may result in the loss of certain heat-sensitive nutrients, including vitamins and antioxidants. Consequently, refined groundnut oil may have lower nutritional value compared to cold-pressed varieties.
  • Refined groundnut oil often has a milder flavour and aroma compared to cold-pressed oil.
  • The refining process removes impurities and natural flavours, resulting in increased shelf life and more neutral-tasting oil that may be preferred for certain cooking applications where a lighter flavour is desired.

Key Differences:

1. Nutritional Content: Cold-pressed groundnut oil retains more nutrients due to the absence of heat and chemical solvents during extraction, making it a healthier choice.

2. Flavor Profile: Cold-pressed groundnut oil maintains the natural flavour and aroma of peanuts, while regular groundnut oil may have a milder, more neutral taste.

3. Processing Method: Cold-pressed groundnut oil is minimally processed, whereas regular groundnut oil undergoes refining processes that may involve heat and chemical solvents.

What is the shelf life of the groundnut oil?

The shelf life of Advait Living cold-pressed groundnut oil is 9 months. To extend the shelf life of groundnut oil and maintain its quality, it's essential to store it properly. Here are some tips to properly store our cold pressed groundnut oil.

Tips to Properly Store Cold Pressed Groundnut Oil:

1. Cool and Dark Location:

Store groundnut oil in a cool, dark place away from direct sunlight and heat sources. Exposure to light and heat can accelerate oxidation, leading to rancidity and a shorter shelf life.

2. Airtight Container:

Transfer the groundnut oil to an airtight container to protect it from air exposure. Oxygen can also contribute to oxidation, so minimizing air contact helps preserve the oil's freshness.

3. Avoid Moisture:

Keep groundnut oil away from moisture and humidity, as water can promote the growth of mold and bacteria, leading to spoilage.

4. Use Clean Utensils:

Always use clean and dry utensils when handling groundnut oil to prevent contamination.

5. Check for Signs of Spoilage:

Periodically check the oil for any signs of spoilage, such as off odours, unusual colours, or a rancid taste. If the oil appears or smells off, it's best to discard it.

By following these storage tips, you can help extend the shelf life of groundnut oil and ensure its quality for a longer period.

My cold pressed groundnut oil is creating a fizz/foam. Is that normal?

Cold pressed oils may sometimes create foam or fizz while cooking. This is because freshly cold pressed oils may have some moisture present in them. It is by no means rancid or bad. The moisture gets heated and evaporates and you can continue cooking. The quality of oil is not compromised.

What are the Benefits of Cooking in Groundnut Oil?

Groundnut oil, also known as peanut oil, has been a staple in many cuisines around the world for centuries. It is extracted from peanuts and is renowned for its distinctive flavour and versatility in cooking. When it comes to the health aspects of groundnut oil, cold pressed version of this oil particularly stands out for its nutritional benefits.

1. Monounsaturated Fats

One of the key components of groundnut oil is monounsaturated fats, specifically oleic acid. These healthy fats have been linked to numerous health benefits, including:

2. Polyunsaturated Fats

Groundnut oil also contains polyunsaturated fats, primarily linoleic acid, an omega-6 fatty acid. While omega-6 fatty acids are essential for the body, they should be consumed in moderation as an imbalance between omega-6 and omega-3 fatty acids can contribute to inflammation.

3. Vitamins and Antioxidants

Cold-pressed groundnut oil retains significant levels of vitamin E, an antioxidant that helps protect cells from damage caused by free radicals. Antioxidants play a crucial role in reducing the risk of chronic diseases and promoting overall health.

Is Cold Pressed Groundnut Oil Good for Heart?

Yes, cold-pressed groundnut oil is good for heart health. It contains predominantly monounsaturated fats, such as oleic acid, which have been shown to have beneficial effects on heart health. These healthy fats can help lower levels of bad cholesterol (LDL cholesterol) while increasing levels of good cholesterol (HDL cholesterol), which in turn reduces the risk of heart disease.

I. Monounsaturated Fats: A Heart-Healthy Component

1. Oleic Acid Content:

Cold pressed groundnut oil is rich in monounsaturated fats, primarily oleic acid. These healthy fats have been extensively studied for their positive effects on heart health.

2. Cholesterol Management:

Oleic acid helps lower levels of low-density lipoprotein (LDL) cholesterol, commonly referred to as "bad" cholesterol, while simultaneously increasing levels of high-density lipoprotein (HDL) cholesterol, known as "good" cholesterol. This balance is also crucial for maintaining cardiovascular health and reducing the risk of heart disease.

II. Nutrient Retention in Cold Pressing

Cold pressed groundnut oil is extracted without the use of excessive heat or chemical solvents, allowing it to retain more of its natural nutrients compared to oils processed using conventional methods.

III. Other Heart Health Benefits

1. Reduced Risk of Cardiovascular Disease:

Consuming cold pressed groundnut oil as part of a balanced diet can contribute to a lower risk of cardiovascular disease. Its favourable fatty acid profile and nutrient content support healthy cholesterol levels and overall heart function.

2. Anti-inflammatory Effects:

The preservation of vitamin E and antioxidants in cold pressed groundnut oil provides additional cardiovascular benefits. These compounds help protect against oxidative stress and inflammation, which are underlying factors in the development of heart disease. By reducing inflammation, this oil supports the health and proper functioning of blood vessels and the cardiovascular system.
