Advait Living A2 Desi Ghee is cultured ghee, made from 'dahi' and not from 'cream'. "Cultured" or "probiotic" ghee, decreases bad cholesterol and regulates fat metabolism. Ayurveda recommends 'cultured' ghee for cooking.

Lactose-free and butyrate-rich: Cultured ghee is made from dahi/curd which converts the lactose to Lactic acid and hence free of lactose. It is also much easier to digest making it appealing to children and elderly people as well.
Making Process
Our ghee is made traditionally as per Ayurveda's recommended Bilona (bi-directional) churning process. The curd is churned bi-directionally, separating butter from curd before transforming into the golden elixir that is A2 Desi Cow Ghee.
- Raw milk from desi cows is collected and boiled. This ensures the removal of all undesired bacteria.
- A starter culture of 'dahi' (curd) is added to the milk and left till the curd is set. Curd is a pro-biotic and converts all milk into gut-friendly bacteria.
- Traditional bilona (bi-directional) churning of curd separates good fat (butter) from buttermilk and whey.
- Butter is slow-cooked on low flame to get delicious granular ghee. This also separates all milk solids from butter to significantly increase the heat-stability of the ghee.
- Delicious ghee with natural butyrate and medium soft granules are packed in food-safe glass bottles for you.

How To Use?
In the morning, you can spread a bit on your rotis, idlis or toast to include good fats in your breakfast. When cooking, swap out regular oil with ghee for sautéing vegetables or frying eggs. Enhance the flavour of rice and dal by mixing in a small amount of ghee before serving. You can also drizzle melted ghee over steamed veggies or popcorn for an extra burst of richness. Use ghee as a finishing touch by topping it over khichdi, dal tadka or even rasam rice.

Why is 'dahi' ghee better than 'cream' ghee?
'Dahi' ghee is made by first fermenting the milk. The conversion of milk to curd makes it probiotic and gut-friendly. 'Dahi' ghee is also completely lactose-free and butyrate-rich.
Cream ghee only uses the fat of the milk whereas dahi ghee uses all of the milk and hence all available bio-active compounds making it far more nutrient-dense.
What is the shelf life of Advait Living A2 Ghee?
We recommend using our A2 ghee 6 months from the manufacturing date. However, you can safely use it till it does not discolour or go rancid. Store in fridge (before opening) to increase shelf life.
Is Advait Living ghee the same as 'clarified butter'?
Our A2 ghee is not 'clarified butter'. Clarified butter is a factory-made product. Our ghee is handcrafted and made at our farms.
Why is A2 Ghee so expensive?
A2 Cow Ghee is made from 25-30 litres of pure cow milk, unlike the ghee made from cream or powder. Further, cow milk has lower fat % and yields (unlike buffalo milk) making it more expensive.
Is your ghee certified organic?
Our ghee is not certified organic. However, our ghee is clinically tested. The latest reports for its purity, chemical-free and adulteration-free are available on request.
Are you accepting international orders?
Regretfully, we haven't started shipping internationally yet. However, we will announce formally once we start.
What is the ideal ghee texture?
Different ghee will have different textures. Some are grainy, some are creamy and others are smooth.
- Granules (danedaar ghee) are one of the quality considerations of ghee. Typically, granules are formed due to the presence of higher melting saturated fatty acids, especially palmitic & stearic. Large and thick granules are a result of high temperatures.
- Artisanal ghee will usually have soft, medium-sized and evenly distributed granules that are a result of the slow-cooling process to obtain ghee.
Why does the ghee consistency change?
'Dahi' ghee will be more liquid and softer as compared to more commercially available ghee. However, the ghee will change consistency (become more solid) due to changes in ambient temperature.
In winter or if stored in the fridge, the ghee will become more solid. However, it will remain soft and easy to scoop out.
Storage of ghee will also play an important role in its consistency.
Temperature changes (room temperature to the fridge and back) will affect its overall consistency. But this will not impact the quality of the ghee.
Can I use Ghee in baking?
Yes, you can. Ghee can be an excellent replacement for butter due to its high smoke point as well as the healthy vitamins and fats it contains. You can bake or roast even meats and seafood in ghee. Ghee oil brushing during Barbeque renders excellent ghee-coal flavours.
